Method. Preheat the oven to 175C/Gas 3½. Add all of the ingredients, except the vanilla in a large bowl and work together until it resembles breadcrumbs. Add the vanilla and lightly bring together. Tip out onto a lightly floured surface and gently knead to form a dough.
Take your bowl off the mixer, smooth out the icing, pick up your paddle, drizzle a ribbon of icing along the surface, and then start counting. The ribbon of icing should smooth out on it’s own somewhere between 10-20 seconds. Tah-dah! Flooding icing.

Trim one end of the rainbow buttercream pouch, (steps 3-4). Fit the buttercream pouch into a piping bag fitted with a start tip, (steps 5-6). Pipe rainbow swirls on top of the cake. Pipe 4 opposite swirls and then pipe the swirls between, (step 1). And lastly decorate the tops of swirls with heart sprinkles, (steps 2-3).
Begin by using a whisk to mix 5 tablespoons of meringue powder and 3/4 teaspoon of cream of tartar with 3/4 cup of warm water. Mix it for about 30 seconds, making sure that you get rid of all lumps. If you are not familiar with meringue powder, it is used in royal icing as a substitute for raw eggs whites. Look, Mom, no Salmonella!
Prepare the cake batter. In a stand mixer cream butter, cream cheese, and sugar for 1-2 minutes. Add eggs one at a time and beat on low for 20 seconds after each addition. Add the vanilla and mix one more time. Whisk flour and salt, then slowly add to the creamed mixture.

It will take approximately 70-80 drops of royal blue food coloring for four cups of frosting to reach the desired shade.
